Basic Chocolate Chip Cookies

choc chipVariations of a basic chocolate chip recipe to create your perfect cookie. Like them thin and crispy? How about thick and chewy? By making substitutions of ingredients you can change the basic recipe to suite your particular tastes.

Ingredients

  • 1/2 cup shortening*
  •  1/2 cup butter softened
  •  1/2 cup granulated sugar
  •  1 cup packed brown sugar
  •  1 teaspoon baking soda
  •  3/4 teaspoon salt
  • 2 eggs
  •  2 Tablespoons light color corn syrup**
  • 1 Tablespoon vanilla
  •  2 3/4 cups all-purpose flour
  •  1 12 ounce package (2 cups) semisweet chocolate pieces

Directions

  1. Pre-heat oven to 375 degrees. In a large mixing bowl beat the shortening and butter with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, granulated sugar, and baking soda and salt. Beat on medium speed for two minutes, scraping the sides of the bowl occasionally. Beat in the eggs, corn syrup and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour. Stir in chocolate pieces and, if desired, nuts.
  2. Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake in a 375 degree F oven 6 to 8 minutes or until edges are lightly browned. Transfer cookies to a wire rack and let coo for two m inutesl. Makes about 48 cookies.

* TIP:

If desired, you can substitute 1/2 C vegetable oil for the shortening. Prepare as directed except beat butter with electric mixer on medium to high for 30 seconds, the gradually beat in the oil.

** TIP:

The splash of corn syrup ensures chewy, tender cookies that stay fresher for longer.

Make Them The Way You Want Them

CHEWY BASIC

The basic recipe above, made with a combination of butter and shortening which gives a butter flavor without spreading too thin. It has more brown sugar than granulated.

 SOFT and CAKELIKE

Use cake flour instead of all-purpose. Shortening helps the tender cookies hold their shape and sour cream adds extra moisture. Brown sugar is used exclusively.

  •  3/4 teaspoon salt

  •  1 12 ounce package (2 cups) semisweet chocolate pieces
THIN and CRISPY  
This cookie is made with only butter, which produces rich, thin and crisp baked cookies. There is more granulated sugar in this recipe than the basic formula which adds to the cookies crispness.
  • 1/2 cup butter, softened

  • 3/4 cup granulated sugar
  •  1 teaspoon baking soda
  •  3/4 teaspoon salt
  • 2 eggs
  •  2 Tablespoons light corn syrup**
  • 1 Tablespoon vanilla

  •  2 1/4 cups all-purpose flour
  •  1 12 ounce package (2 cups) semisweet chocolate pieces

Mix it Up

To jazz up your cookies try throwing in one of these add-ins:

  • 1 cup chopped mini peanut butter cups
  • 2 cups regular rolled oats
  • 1 1/2 cup chopped nuts [walnuts, pecans, or hazelnuts]
  • 1 cup snipped dried fruit

Choose Your Chips

  • Dark Chocolate Chips – can be either semisweet or bitter
  • Semisweet Chips – technically considered dark chocolate, semisweet usually contains 52-62 percent cacao, resulting in a smooth dark chocolate flavor.
  • Milk Chocolate Chips – contains 36-46 percent cacao and has the addition of milk, which makes the chocolate creamier.
  • Chocolate Chunks – These can be any percentage of cacao, but the larger  chunks will make the chocolate in the cookies stand out even more.
